Chopped clams are tossed with a buttery stuffing and topped with a sliver of bacon before being baked to perfection. For Clams Casino Dip, we use both the minced clams andsome of the juices from the can. The juices help to infuse the dip with more flavor and they also thin the mixture to become easily dippable. You can’t make a dip with clams alone, of course.
Baked Clams Casino Dip/spread
- Place on a baking sheet. Heat in a preheated 350 degree F (175 degree C) oven for 1 to 2 minutes, or until clams open. Discard any that do not open.

This clams casino dip with bacon has always been the dish I bring to a friend’s house or a tailgate party. It’s a take on the traditional clams casino my mother would make when we had an abundance of clams.
For this recipe I substituted canned clams to bring down the cost. You may use fresh clams but I have found there isn’t a difference in taste. This recipe is easy to make, is served in the dish in which it was baked or it can be fancied by serving them in individual clam shells.
Place all the open clams in a baking sheet and with a teaspoon put the breadcrumbs in each clam until the clam is completely covered. Bake at 500F for 5-7 minutes, then put under the broiler for 1 minute to brown.

Recipe # 1 Clams Casino Dip with Cream Cheese and Sour
1 can (5 oz. ) baby clams
4 oz. light cream cheese, softened
2 tbsp. sour cream
3 strips bacon, cooked and crumbled
2 tbsp. finely chopped red bell pepper
2 green onions, finely chopped (or 2 tbsp. yellow onions, chopped)
1 tsp. basil
1 tbsp. parsley
1/2 tsp. horseradish
1/2 tsp. lemon juice
1/4 tsp. Worcestershire sauce
1 -2 dash hot pepper sauce

Preparation:
Drain clams, reserving 1 tbsp. clam juice.
Rinse, drain and chop clams; set aside.
Beat together cream cheese and sour cream.
Stir in clams, reserved juice and all remaining ingredients.
Cover and refrigerate for 2 to 24 hours.
Serve with crackers or corn chips.
Recipe #2 Spicy Clams Casino Dip Recipe #2
6-8 strips bacon, cut in small pieces
1 jalapeno, seeded, minced
1/2 cup finely diced red bell pepper
1/3 cup finely diced celery
2 cloves minced garlic
1/4 cup minced green onions
1 pound cream cheese, room temperature
2 (6.5 ounce) cans minced clams
calm juice from one
1/2 lemon, juiced
a dash or two hot sauce to taste
freshly ground black pepper to taste
Preparation:
Cook bacon in the butter until crisp.
Drain the fat, and reserve the bacon.
Place the pan back on the heat and add the jalapeno, bell pepper, celery, garlic, and green onions.
Cook stirring for 2 minutes, then pour in the juice from one can of clams. Turn heat to high, and cook until almost all the liquid is reduced.
Transfer into a mixing bowl and let cool. When cool add the rest of the ingredients and mix well
Cover and refrigerate for at least 4 hours, or overnight.
Let sit out for an hour or so before the party, so it can warm up a bit.
Garnish top with sliced green onions and bacon.
Serve with crackers.
Recipe # 3 Clams Casino Dip with Bread Crumbs and Cheese
2 tbsp. olive oil
2 tsp. chopped onion
1/2 cups Italian (or plain) bread crumbs
2 (6.5oz) cans minced clams with liquid
1/4 c. cooked chopped spinach
8 strips bacon, fried and crumbled
American cheese
Romano cheese
Paprika
Preparation:
Baked Clams Casino Dip
Sauté onion in olive oil.
Add bread crumbs and remove from heat.
Add clams with reserved liquid, spinach and bacon. Mix well.
Spoon 1/2 mixture into ungreased casserole. Add few strips of American cheese.
Add remaining clam mixture.
Cover entire top with American cheese.
Sprinkle with Romano cheese and paprika.
Bake uncovered at 350 degrees for 30 to 40 minutes or until cheese is browned and mixture is starting to bubble.
Serve with crackers.
