We read about a place called Javier’s located in the Aria hotel, it was a little upscale so I was a little concerned it wouldn’t be the authentic Mexican cuisine I’d hoped for. Regardless, we decided to give it a go. The lunch menu was slightly different than the dinner menu though the price range was roughly the same.

Southern California hotspot Javier’s is now open at ARIA Resort & Casino in Las Vegas. Javier’s regionally inspired cuisine and warm, intriguing design brings a spirit of Mexican grandeur to CityCenter while fulfilling a culinary niche for Las Vegas visitors.

“The dishes we present at Javier’s are derived from generations upon generations of my family’s recipes,” says co-founder Javier Sosa. “You will not find Mexican flavor like this anywhere else in Vegas.” The restaurant’s nearly 200 employees underwent extensive training overseen by Sosa himself.

Characterized by its authentic cooking techniques and fresh, high-quality ingredients, Javier’s regionally influenced Mexican-style fare features seafood, steaks, chicken, and a selection of vegetarian dishes. A visit to Javier’s is not complete without one of its famous hand-shaken, made-to-order margaritas. Tequila aficionados can choose from an array of premium selections to mix or sip from Javier’s signature “tequila tree,” while wine connoisseurs can enjoy an extensive collection of vintages and varietals.

“Javier’s design is as captivating and delicious as the food we serve,” co-founder Mark Post says. “The ambiance draws guests in, and no matter where they dine, they’ll enjoy a completely different experience each time they visit.”

Brought to life by veteran designer Dodd Mitchell, Javier’s welcomes guests with a dramatic and sensuous ambiance, and Mexican-influenced decor. The design juxtaposes strong architecture with soft color schemes and fabrics, such as corset-style lacing on the leather booths. A lounge adorned in 4,000 metal decorative nail heads called clavos, accented by plush furnishings, also enhance the look and feel of the space. Each culturally inspired decoration and piece of furniture was custom-made for the ARIA location, including hand-crafted pottery from Guadalajara, Mexico; reclaimed vintage belts adorning window and doorframes; and opalescent abalone tiles covering the walls and ceiling in the private dining room.

Over the main bar, hundreds of rope strands form an intricate canopy. Guests can sip Javier’s signature margaritas at the vintage-roulette-inspired metal bar topped with African Ziricote wood. Embedded in the bar are four state-of-the-art cell phone-charging hubs.

The artistic anchor of the restaurant’s décor is the world’s largest piece of chainsaw art, spanning 25 feet and weighing 3,000 pounds, carved by celebrated artist J. Chester Armstrong. Conceived by Dodd Mitchell Design and visible from more than 200 feet away, the intricate work of art features five 5 x 10-foot panels illustrating the Mayan Creation myth blended with modern Mexican history. Hundreds of Día de los Muertos-inspired skeletons dance, mourn, laugh, weep, and romance their way across the panels as guests discover hundreds of hidden elements on a five-part journey from the dark Tree of Death to redemption in the Tree of Life.

The 9,000-square-foot restaurant features a circular main bar, intimate lounge, and two expansive dining rooms seating 280 guests. Javier’s also has an elaborate private dining room with seating for 20. This special space evokes an aura of Spanish royalty with shimmering tile walls, agave-leaf-inspired chandeliers and hand-carved wooden ceiling ornaments. The lounge and bar offers Javier’s full menu and transforms into a late-night experience at 11 p.m with authentic Cuban and Spanish music.

Javier’s joins the AAA Five Diamond resort’s impressive culinary offerings from a collection of the world’s most renowned chefs and restaurateurs including Michael Mina, Sirio Maccioni, Jean-Georges Vongerichten, Masa Takayama, Shawn McClain, and Julian Serrano.

Javier’s offers lunch service from 11:30 a.m. to 4 p.m. and dinner service until 2 a.m.

About the restaurant: Javier’s at Aria Resort & Casino serves dishes created from co-founder Javier Sosa’s family recipes. (The Mexico native also has Javier’s restaurants in Southern California and Los Cabos.) The massive 9,000-square-foot restaurant features a circular main bar with a canopy of ropes overhead, a lounge, two dining rooms and a private dining room. Javier’s is located just off the casino, so request one of the booths or tables farther back if you’d like a less public setting. The décor includes alcove ceilings and the world’s largest piece of chainsaw art, with panels illustrating the Mayan Creation myth blended with modern Mexican history.
Food & Drinks: Kick things off with chips and guacamole or octopus ceviche with red onions and cilantro. We recommend selecting one of the combination meals, particularly the Cabo Azul, which includes a Maine lobster enchilada; grilled chile relleno stuffed with cheese, shrimp and Dungeness crab; and an Ensenada-style shrimp taco. Another option is the “Arrachera,” a grilled skirt steak served with fries and refried beans. Dessert brings flan, cakes and fried ice cream. Hand-shaken, made-to-order margaritas are among the libations; the signature “tequila tree” holds a massive collection of bottled tequilas. The staff is efficient and attuned to the diners.
